Spicy Sesame Peanut Ramen Noodles


So Delicious and So Easy! I live in Seattle where temperatures over 80 are few and far between, thus the majority of us live without AC in our homes.  But alas when a "heatwave" strikes it is miserable! Well this week has been just that, with temps averaging in the high 90s our home is sweltering to say the least, this creates agony when thinking about meal prep and quite honestly, the majority of times we simply opt to eat out for the benefit of enjoying an air-conditioned restaurant.  Last night I wanted something light and cold for dinner and something that would require little heat to make, peanut noodles came to mind and so I searched Pinterest for  ideas and although I found lots of recipes most just were too much effort for me at the time, I came across a recipe from thewholesomedish.com for Sesame Peanut Noodles and it was AWESOME, super easy and very yummy.  CLICK HERE FOR THE ORIGINAL RECIPE
and below is my revised version....
  • 2 packages of ramen noodles (cooked in water with no broth and drained and rinsed with cold water) - Set Aside
  • 1 T minced garlic
  • 2 T honey
  • 2 T creamy peanut butter
  • 2 T soy sauce
  • 1 T sriracha
  • 2 T rice wine vinegar
  • 1 T toasted sesame seeds
  • 1 green onion (green portion only) - thinly sliced
  • 1 t water
In Medium Sized Bowl combine all ingredients (except noodles) stir until smooth, Toss well drained room temp or cold noodles and serve.
