4 large tomatoes, coarsely chopped
1 large cucumber, peeled and coarsely, chopped
1/2 bunch of flat FRESH parsely, finely chopped
1/2 red onion, chopped
1/2 cup chopped Kalamata olives (do not substitute black olives)
juice of 1 lime
1/4 cup of olive oil
1 tsp salt
Stir together and serve. Olives may be left out.
